40 Day Challenge – Day 14

Now that 2 weeks have passed the Surge workouts are getting easier, yet I still get sore which I love! Plus breaking a hard sweat sure helps me get my gallon of water down a day!

The food is becoming more balanced and I have been able to find some great recipes that we will keep even after the challenge is over. The only thing I miss is my “once in awhile” glass of wine. Especially during the summer I enjoy sipping on a glass of light, white 2 Buck Chuck from Trader Joes while relaxing in the back yard after a long day. I just remind myself that this is the BEST choice for me and that my body will thank me!

I am linking some of the recipes we are using for the challenge so that you may try them out yourself.  Here are some of our family’s favorites:

Artichoke Lemon Pesto Chicken Pasta  This was by far our family’s favorite! The taste of the pesto was mellow yet so full of flavor and paired nicely with the chicken and spaghetti squash.

Easy Chicken Dinner in 1…2…3  Talk about EASY! Wow this is definitely going to be my “go-to” dinner when I don’t have a lot of time. The kids absolutely loved it. My daughter’s exact words, “I want to eat this for every dinner!” (She is my pickiest eater).

Creamy Avocado and Spinach Chicken Pasta  This was a yummy one as well. The only thing I would change is to not use all of the pesto you make. It was a little too much. I would dish up the servings first and then allow each person to put as much of the pesto on as they would like. The flavor of the chicken and squash were delightful as themselves, so no need for all the pesto.

Buffalo Chicken Mini Meatloaf  Wow! Talk about HEAT! I followed the recipe to the word and it was HOT! It was like eating hot wings, but there is no ranch to dip in. Still so full of flavor and my husband LOVED it! Next time I will be cutting the amount of hot sauce in half so the rest of the family can eat it.

Chicken Basil Meatloaf  So if you want something that is opposite of the Buffalo Chicken Meatloaf; this is it. It was good, but a little bland. Very easy to make, so will probably make when time is short and it’s just the girls and I for dinner.

Hearty Banana Granola Pancakes  After 3 weeks of the girls begging for pancakes I finally bellied-up and made some PALEO ones that Adam and I could eat too. These were really yummy! It took two rounds before I got the hang of when to flip them. I left the granola out… too much work for the first time on these babies. I did double the recipe as you have to make the pancakes really small in order to flip them without having them fall apart.
